if you’re looking for a fabulous bottle of white…

pick this up! it was so good that i was compelled to tell you about it. i’m not usually passionate about whites, but this one was really great. no idea how much a bottle costs though because this one was a gift.

so on an impulse, we bought tickets to see my favourite 90s band…

first salmon plank of 2013

once you plank, it’s hard to go back. it takes a little bit of forethought to do this because you have to soak the plank for several hours before putting it on the bbq, but the process is SO worth it. All I do is:

- buy wild salmon (wild is essential…..see here)

- pre heat bbq to med/high heat

- oil the board

- a bit of salt and pepper on the fish followed by a drizzle of pure maple syrup

- place on bbq for approximately 20 minutes, but you should check every 5 minutes just to make sure because timing really depends on the thickness of the fish

- enjoy it with something green!! maybe this or this?

Lovely but complicated. This would be awesome for a special occasion or a summer day when you happen to have some time to kill.

  • For Campari Cubes (Makes 4)

    8 tablespoons diluted Campari

    8 tablespoons diluted tangerine juice

    4 tablespoon diluted pomegranate juice

    8 tablespoons diluted Campari

  • For Galliano Cubes (Makes 4)

    8 tablespoons diluted Galliano

    4 tablespoon diluted peach nectar

    8 tablespoons diluted Galliano

    8 tablespoons pink lemonade

  • For Nonalcoholic Cubes (Makes 4)

    8 tablespoons pink lemonade

    8 tablespoons diluted pomegranate juice

    4 tablespoon diluted black currant juice

    8 tablespoons pink lemonade

    Prepare all liquids. For each flavor of ice cube, alternately layer the aperitif or lemonade with the fruit juice or nectar in ice cube trays, allowing the liquid to freeze completely before pouring on another layer, about 1 hour. Serve in seltzer.

chicken salad with avocado, corn and black beans

i was digging through my archives and found this recipe. i used to make this all time and i loved it, but totally forgot it existed. it reminds me of summer so i’m going to make it again this week. 

you can’t really go wrong with this and it isn’t really a recipe so much as it is a perfect combination of delicious ingredients so add as little or as much of each as you like!

  • roasted or barbecued chicken breast, shredded or thinly sliced
  • avocado chunks
  • black beans, 1 can rinsed and drained
  • red pepper, thinly sliced AND/OR diced tomatoes (for both taste and prettiness)
  • corn niblets, best if cut fresh off cob
  • green onion, chopped
  • fresh cilantro, TONS

throw it all together and dress it very simply with a squeeze of fresh lime and a drizzle of good quality olive oil :)

EAT.

p.s. this tastes great as leftovers the next day too!

spicy grilled watermelon

ingredients:

  • 1/4 cup honey
  • 1/4 cup juice from about 4 limes
  • 2 teaspoons cayenne pepper
  • 1 teaspoon Kosher salt
  • 1 medium watermelon, cut into 1-inch thick wedges
  • 1/2 cup mint chiffonade

1. whisk together honey, lime juice, cayenne and salt

2. brush onto both sides of watermelon and grill under marks appear…about 2 minutes per side.

3. remove from grill, sprinkle with mint and serve.
