guacamole grilled cheese!!

The guacamole takes this grilled cheese sandwich to a whole new level of goodness.

ingredients:

To make the guacamole:
2 ripe avocados
1/2 small onion, minced
1 clove garlic, minced
1 small jalapeño, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1 Roma tomato, chopped

4 slices crusty white bread
4 slices Cheddar cheese
Butter, for buttering bread

directions:

1. To make the guacamole-cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a large bowl. Using a fork, mash the avocado. Add the onion, garlic, jalapeño, cilantro, lime juice, salt and pepper. Stir until well combined. Add the chopped tomato and stir.

2. Heat a pan or griddle to medium-high heat. Spread desired amount of guacamole on both slices of bread then top with cheese. Butter outer slices of bread and grill on one side for about 2 minutes or until golden and crispy. Flip the sandwich and grill until golden brown. Make the other sandwich the same way and serve warm.

pesto chicken salad

Fresh Basil Pesto
yield: 1 cup Pesto

2 cups Fresh Basil
1/3 cup Pine Nuts, toasted and cooled
2 Garlic Cloves
1/2 cup Extra Virgin Olive Oil
1/2 cup Fresh Parmesan-Reggiano (I used Grana Padano Stravecchio)
Salt and Fresh Ground Pepper, to taste

1. Add basil leaves and pine nuts to the bowl of a food processor. Pulse until completely chopped up.
2. Add garlic cloves to the food processor and pulse some more until garlic is fully chopped up and mixed with the basil mixture.
3. Add the oil in a slowly steady stream to the basil mixture while food processor is turned on.
4. Scrape the sides of the bowl and add the cheese. Pulse a few more times and then season with salt and pepper to taste.

Pesto Chicken Salad
yield: 4-5 portions

1 cup Fresh Basil Pesto (recipe above)
2 cups Chicken Breast, chopped in small cubes
1/2 cup Light Sour Cream
1/4 cup Mayonnaise (low fat or regular)
1 tsp Lemon Juice

1. Mix all ingredients in a large bowl. Sandwich between two fresh bread slices or serve with lettuce.

i have always wanted to eat at ‘the grilled cheese’ in kensington market. there are 10 different sandwiches to choose from and apparently it’s nothing like the old school kraft single slice version. here are a couple of their selections:

* classic with jack, cheddar, provolone and tomato

* mushroom madness with cheddar, portabello and garlic

* the turk 2000 with Monterey jack, turkey, tomato, onion and garlic

* dill-icious with dill havarti, basil pesto, sundried tomato and onion

* black jack with jalapeno, monterey jack, tomato, spinach, and black olive pesto

* motzy with bocconcini, sun-dried tomatoes, pesto, balsamic dressed arugula

hmmm….maybe i should just try a couple of these myself?

  1. Apple Sauce (homemade), Cinnamon, Nutmeg, Dash of Brown Sugar A simple dessert like toast that can be enjoyed anytime of the day.

  7. Tuna Salad, Celery, Havarti Cheese - A simple lunch that really fits the bill and is so delicious on a thick slice of multigrain bread in the toaster oven.
  8. Butter and Poached Egg - The breakfast classic and oh so good with a glass of fresh squeezed orange juice or even a berry smoothie
  9. Brie, Cranberry Sauce and Bacon – Killer snack and even great for parties on mini toasts.
  10. Chicken Salad, Walnuts and Diced Granny Smith Apple - One of my favorite open faced sandwiches.
