here’s the backstory…when jeff and i first started dating a billion years ago, i thought his disdain for all vegetables (except celery…but that’s not a real veggie) was cute. the first dinner at uni that i made for him was a ploy. i cackled to myself as i mashed cauliflower hoping to trick him into thinking it was potatoes. he was not fooled…i’m not sure it even made it to his lips.

fast forward to yesterday. i did it again…using the linked recipe below and…

AND….

i nonchalantly declared that we’d be having mashed potatoes with our flank steak. he proceeded to scoop out a huge mountain for himself and then he started eating. i watched him as the forkfuls became smaller…but he was eating. that’s when i burst out laughing which was the give away. there’s clearly a psychological component to his food madness because he halted all faux-mashed potato consumption when he found out its true identity. 

oh well. if you’re a normal person, i can assure you that they’re easy to make and delish!
