eat me 8 - kale chips

the first time my husband saw me preparing kale chips he declared that i was “taking this health thing too far.” i got the recipe from smittenkitchen.com and the chick promised that they would be crisp and delicious. they were definitely crisp, but not so delicious. i was disappointed, but it is KALE so how much can you really expect?
i decided to try again; partly out of stubbornness and partly because i enjoy antagonizing my husband when it comes to food. the next time i made them, they were actually tasty…for real. even jeff likes them (well, sort of).
here’s my modified recipe:
- 1 bunch of kale (this will make many batches)
- a dollop of olive oil
- freshly ground sea salt
- freshly ground pepper
- garlic powder
- a wee bit of chili powder
1. preheat oven to 300
2. rinse and dry kale and then remove the stems and the tough ribs that run through the center of the leaves
3. rip into medium-sized pieces, toss with olive oil (get them really coated) and then sprinkle with salt, pepper, garlic powder and a wee bit of chili powder. then add some more garlic powder…just because
4. arrange leaves in a single layer on a couple of baking sheets lined with parchment paper (for easy clean up and non-stick)
5. bake for about 15 minutes. check the status at the 10 minute mark because you don’t want to leaves to start turning brown. for larger kale pieces, you made need to bake for 20 minutes
